Simple and delicious! If you have ever tried Lenny and Larry's vegan cookies, you will know where I got my inspiration. These cookies are flour free but still soft and chewy.
Makes: 12 Large cookies or 24 small
Ingredients:
2 cups quick cooking oats
1 1/2 cups almond flour
2 flax eggs ( 2 tbs ground flax + 2 tbs water for 1 egg)
1/2 cup mashed banana (1 medium-large)
1/2 cup melted coconut oil
1/4 cup liquid sweeter maple syrup, rice malt or honey
1 1/2 tsp cinnamon
1 tsp salt
1/2 cup semi-sweet chocolate chips
Directions:
Grease or line a large baking tray.
In a small bowl combine your flax and water and let sit for 5 minutes.
In a large bowl mix together the oats, almond flour cinnamon and salt
When the flax egg has thickened whisk it with the melted coconut oil, mashed banana, and sweeter.
Combine your wet and dry ingredients. Fold through your chocolate chips and place your dough in the freezer for 30 mins to firm while your oven preheats at 190 degrees celsius.
Roll the dough into small balls and spread evenly on the tray. Flatten them into desired thickness using a fork. Bake at 190 degrees celsius for 10-12 minutes. Let cool before serving or storing.
