Cookie dough bars

Gluten-free/ sugar-free/ low carb/ vegan


As a teenager, I would often skate to the supermarket to buy a roll of cookie dough. There is something about the soft sweet uncooked texture of this treat that makes my mouth salivate. These days I don't date that kind of sugar but I LOVE healthy sweets. So, Meet my new best friend. super simple no-bake cookie dough bars.



Notes: I used sugar-free maple syrup purchased from the supermarket. You can also use normal maple, rice malt syrup or honey for the sweetener. (using alternative sweeteners may affect the flavour and sugar content of the bar).

No-bake cookie dough bars


















Ingredients:

  • 400 g almond meal

  • 1/2 cup coconut oil melted

  • 2 cups (lightly packed) coconut flakes

  • 1/2 cup sugar-free maple

  • 1/2 tsp sea salt

  • 1 bag (150 g) noshu sugar-free baking chips (or choc chips of choice)


Method:

  1. In a food processor or blender, process the maple melted coconut oil, coconut flakes and sea salt until nice and smooth.

  2. In a large bowl mix the almond meal with the wet mixture from the food processor.

  3. Add the chocolate chips and fold through.

  4. Firmly press mixture into a lined or greased baking or loaf tray.

  5. Place in the fridge or freezer to set.

  6. Slice and serve. I served mine with coconut cream <3


 

Tip: It can help to slightly warm the choc chips prior to adding or prepared dough before placing in the baking tray to help the chocolate stay in place.



Store the bars in the fridge or freezer.
