5 Minute Creamy Coconut rice

Who doesn't love creamy rice? This pudding is a healthy alternative to traditional creamy rice. I love this pudding because its cheap, and extremely easy to make. It can be served for dessert or as a delicious warming breakfast.

Serves: 4 small OR 2 large


  • 1 250g packet of quick cook brown rice (cooked per directions in the microwave)

  • 1 cup of canned coconut cream

  • 1/4 tsp of cinnamon

  • Pinch of sea salt

  • 1 tsp vanilla extract

  • 2 tbsp of rice malt, raw honey, maple or stevia to desired sweetness

  • 2 tbsp chia seeds

Additional extras to top: Fruit, nuts, almond butter, dark chocolate...

Directions: In a large bowl mix hot brown rice and other ingredients well.

Divide into bowls and add your favourite toppings :)

**If refrigerating and serving later add the rest of the can of coconut cream because the mix will thicken when left.
