Crispy Tempeh Meat-balls



Gluten free // Oil free // Vegan


These savoury ‘meatballs’ are Crispy and packed with plant-based protein! They are an excellent option for weekly meal prep. If you follow me on Instagram, you will often see these delicious balls in my lunchtime nourish bowls. If you want some inspiration to see my favourite ways to serve them below.


Makes: 20-24 medium size balls

Prep: 20 mins

Ingredients:

  • 1 300g packet of organic tempeh

  • 1 can chickpeas drained and rinsed

  • 2 cloves garlic

  • 1 tbs tahini

  • 1 tsp onion powder

  • 1 tsp cumin

  • 1 tsp paprika

  • 1/2 tsp pepper

  • 2 tbs tamari or gluten-free soy sauce

  • 2 tbs lemon juice

  • 1 tbs apple cider vinegar

  • 1/4 flax meal

  • 1/3 cup vegan cheese

  • 1/3 cup almond meal *can substitute for GF bread crumb’s if you cant consume nuts

  • 1/4 cup of gluten-free breadcrumbs for rolling

Method:

  1. Preheat your oven to 170 degrees Celsius.

  2. In a food processor blend All your ingredients except the ground flaxseed, almond meal, vegan cheese and gluten-free breadcrumbs. Process scraping down the sides until a smooth consistency remains.

  3. In a large bowl using with your hands or a spoon mix the processed ingredients with the ground flax, almond meal and vegan cheese.

  4. Line a large baking tray with non-stick paper. Roll your mix into 20- 24 balls coating the outside in gluten-free breadcrumbs. Spread evenly on a baking plate and bake for 45 minutes rotating the 'meatballs' halfway through baking. Adjust your cooking time and cook for an extra 15 minutes if you want to make them a larger size.

Notes:

Store your 'meatballs' in the fridge for up to a week.

Its a great idea to make a double batch and freeze half of them for easy lunch and dinners when you are busy.


Serving ideas:

Gluten-free pasta and organic marinara sauce - Tip: always check the nutrition label to make sure there is no added sugar in your marinara sauce.

Pita bread or gluten-free wrap with salad, hummus lemon juice and tahini.

Salad bowl or DIY nourish bowl - Get creative and add your meatballs to a big salad or vegetable stir-fry.
