I get many questions about what I eat before a morning run. If I am running early in the morning, I will usually have a black coffee and one of my ‘Fat Bomb's’ or ‘Keto Fudge’ recipes. Personally, I don't need to have carbs before a morning workout. In the morning’s my body craves fats to fuel my brain. These bombs are my go-to pre-run snack because they give me energy without being heavy on the digestive system. Give them a go and trust me you will love the way they make you feel. No sugar or insulin crash just balanced sustained energy perfect for smashing your next workout.
Creamy Coconut Low Carb Fudge
1/4 cup coconut butter
2 tbs coconut oil
2 tbs tahini
1 tsp vanilla
20 drops liquid stevia
*option to add a few tbs of cacao nibs for an epic crunch!
In a small pot melt and mix the coconut butter, coconut oil and tahini. Add sea salt, stevia and vanilla.
Pour into a silicone mould and place in the fridge or freezer to set. Store in the refrigerator.
This recipe makes one silicone mould's worth of fudge. Double the recipe if you wish to make more.
